Best Food Gifts: Gummy Candy Christmas Tree

Giving The Best Food Gifts This Holiday Season

I love giving memorable gifts. A few years ago, I plastered a bunch of ceramic cups with cute family photos sprinkled with a few embarrassing baby photos. When my family received their photo cups, the results were unanimous– my husband and I had won Christmas 2015.

Then, last year I baked fun holiday cookies. As the kitchen filled with the sweet scent of chewy ginger cookies, I blasted Mariah Carey’s song, “All I Want For Christmas Is You.” Of course, I danced and sang along with the song and when it came to the “you” part I would stop and emphatically point at the cookies.

Dancing and singing, while baking cookies, was so much fun that I wanted to build on that feeling. So, this year I’m building unique food gifts that you can also play with. Welcome to my stackable gummy brick candy Christmas tree recipe. If you seal these gummy bricks in an airtight container, they’ll keep for up to two weeks in the fridge. This is great, because I’m planning on making these ahead of time and throwing them in the fridge until I’m ready to give them away.

Earlier this year, I built an entire pyramid using stackable gummy brick candy, which I coined as my “Party Pyramid.” Mostly because it’s gigantic and could probably feed 10 or more guests.

Like the gummy pyramid, this gummy candy Christmas tree recipe uses corn syrup. But, if you want to substitute honey, then follow my American Flag Made of Gummy JELLO Candy recipe, which I built to celebrate July Fourth. Just keep in mind that the honey slightly overpowers the flavor of the JELL-O mix.

How To Make Gummy Candy

To make the gummy brick candy, I’m using this Candy Block Mold by The Modern Gummy. This candy mold has little divots, which allow the gummy bricks to stack up.

To make LEGO Candy, I'm using The Modern Gummy's Stacking Building Block Candy Mold.

Although the mold comes with an eyedropper, instead I like using this plastic squeeze bottle. The bottle is much larger so it only takes a minute to fill the mold. To remove any bubbles on top, I do use the eyedropper. Make sure to watch my video to see how I do this.

Also, when your making these yummy gummies, remember that it needs to set in the fridge for at least one hour. Make sure to read the notes in my below recipe card to understand the quantity and time required.

Tools To Make Gummy Candy

1. Candy Block Mold by The Modern Gummy

3. Wilton 13x19 inch Cake Board, 6-pack

After making the LEGO candy, I assembled the tree on top of cake boards. I got a large cake board and cut them into 5" x 3.5" rectangles. These allow the tree to easily slide into the clear plastic bags and then I tied each bag with red and white twine. It’s so cute. I’m pretty sure these are the best food gifts I’ve ever given!

Tips For Making Stackable LEGO Gummies

Tip 1: Spray vegetable oil on the mold before adding the gummy mixture; otherwise your gummies will be stuck in the mold.

Tip 2: You only have a few minutes to get the liquid mixture into the candy mold before it firms up. If the mixture hardens, just add it back to a pot and melt it on low heat.

Tip 3: When you put the lid on the mold, make sure “The Modern Gummy” mold on the base and lid line up first.

Tip 4: Press down on the mold to squeeze out any excess liquid. This will help form evenly shaped blocks.

Tip 5: If there’s extra gummy candy along the edges of the bricks, use a sharp knife to cut it off.

This Christmas tree made of stackable gummy LEGO candy might be one of the best food gifts, ever. Now you can play with your holiday gift and munch on it too!

Ingredients

  • vegetable oil spray
  • 4 cups warm water
  • 2 cups light corn syrup
  • 16 tbsp Knox gelatin
  • 12 oz lime JELL-O mix
  • 3 oz tropical fusion JELL-O mix
  • 3 oz berry blue JELL-O mix
  • 3 oz island pineapple JELL-O mix
  • 3 oz orange JELL-O mix

Instructions

  • The below proportions will fill one gummy mold. (Repeat these proportions for each JELL-O flavor). Watch the below recipe video for a better visual idea of how to make these yummy gummies!
  • Spray vegetable oil on the base and lid of The Modern Gummy candy mold. (See blog post for product link).
  • In a small pot, whisk together ½ cup of water, ¼ cup light corn syrup, and 2 tbsp of Knox gelatin.
  • On low heat, continually whisk the mixture until all lumps disappear. Add 3oz lime JELL-O powder and whisk together for one minute until combined.
  • Pour mixture into a small bowl and let it cool for 2 minutes. Remove top foam with a spoon.
  • Pour the mixture into the plastic dispensing bottle and fill each brick in The Modern Gummy mold. (see blog post for product link).
  • Using the eyedropper, suck out any bubbles on top of the bricks.
  • Line up The Modern Gummy logo on the base and the lid, then place lid on top.
  • Push down on the top lid to squeeze out any extra liquid.
  • Put gummy mold in the fridge. Let it set for 1 hour.
  • Remove the lid and pop out the gummies.
  • If the bricks have extra gummy along the edges, use a sharp knife to cut the edges.
  • Repeat above steps and make 3 more batches of the lime gummies and 1 batch each of tropical fusion, berry blue, island pineapple and orange. In total, there are 8 batches of gummies.
  • Cut a cake board into 5” x 3.5” rectangles. Assemble the gummies into three layers as seen in the video.
  • Slide the tree on the cake board into small plastic gift bags and seal it tight. Place in the fridge until ready to give as a gift. The LEGO gummies will last for 2 weeks in an airtight container in the fridge.

Notes

Regarding quantity, in my video, the LEGO candy tree has three layers. The bottom two layers are lime gummies, which form the tree shape. The top layer is the tree decorations with smaller berry blue, tropical fusion, pineapple and orange gummies. If you want to make the exact same tree as in my video, this recipe will yield 6 trees that are 5” x 3.5”. If you only make one layer of the lime gummies, then this recipe will make 10 trees.
Regarding preparation time, it only takes 15 minutes to make the gummy liquid, but it needs to set in the fridge for at least one hour. This recipe fills 8 of The Modern Gummy molds, which yields 6 trees. Since I filled 2 gummy molds at a time, this recipe took around 5 hours (including the time to prepare the mixture and to set in the fridge).
