Substitute for decorating icing. Instead, you can melt chocolate chips in the microwave and use a toothpick to draw on the eyes and antenna. You can also use decorating gel. It’s usually in the baking section at grocery stores.

Prepare the fruit the night before. This way you can quickly assemble the butterfly croissant the morning of Mother’s Day. Just make sure to use paper towel to remove any extra moisture. Then, line an air tight container with paper towel, add your fruit to the container, add the lid and place it in the fridge.
Ingredients
I’m using Thomas’ Mini Croissants. If you have extra time, try toasting them in a toaster oven before serving. It’s worth the extra step! Then there’s the fresh fruit: strawberries, kiwis, and blueberries. You can play around with different types of fruit especially if your mom love specific types of fruit. The decorating icing is readily available at any grocery store. If you can’t find decorating icing, check out the tips section for substitutions.
Step by step
- Prep the fruit. Wash all of the fruit and dry with paper towel. Using a peeler, remove the kiwi skin then cut ¼ inch thick slices. Remove the strawberry stem and cut ¼ inch thick slices.
- Build the body. Add one Thomas’ Mini Croissant to a plate.
- Build the top strawberry wings. Add three strawberry slices to each side of the croissant. See images above.
- Build the bottom kiwi wings. Add two kiwi slices to each side of the croissant. See images above.
- Add blueberry dots. Add one blueberry to tip of each strawberry wing. Add two blueberries to the tip of each kiwi wing.
- Add the facial features. Using blue decorating icing add the eyes and antennas.
- Optional step: add more blueberries to the bottom of the plate.

Build a gigantic butterfly croissant! If you have larger croissants, go for it! You will probably have to add several layers of the strawberries and kiwis.

Add melted chocolate. For an extra pop of detail and sweetness, try melting chocolate chips. Using a spoon, drizzle it on top of the croissants.
